Just took the new Primo XL out of the crate, what should I cook first? (Pics)

To all of the BGE/Primo/Kamado Joe gurus out there, I just set up the new Primo Oval XL (Thanks to Wickowick), and I'm ready to fire it up this evening.

So. . . what should I cook first????

My table will be done this weekend and my primo will be in it. I have been told it is best to start with something simple until you learn temp control. I will probably start with chicken. Like others have said, lets see some pics. I will post mine this weekend. Oh, and yeah thank you Wickowick.

4-5 hour ribs tonight with some sausage after the first hour of ribs so you can have something to snack on!

Friday, get her real hot and cook some steaks.

Definitely a Boston butt on Saturday (all day affair). You can cook some sausage, maybe a fatty, and some jalapeño poppers during the LSU game to eat.

I would wait on the brisket until you have had time to get used to your new pit (unless you are savvy at brisket, low and slow)

I'd cook something that wont upset you too much if it doesnt come out right the first time. There is a bit of a learning curve going from a traditional grill to a ceramic. There was for me at least and I've been grilling/smoking food for years.

OK, so I'm going with a variety of meats and simple, off the shelf seasonings for the sake of the learning curve.

1/2 Slab Baby Backs - W/Richards BBQ rub
4 Beef ribs - sea salt only
4 Chicken Thighs - Greek Marinade
Handful of wings - Slap Ya Mama

Cruising along at about 225 now.

Fine way to break it in! It all looks great but those thighs look just right to me!!!

Nice break in. I did a boston butt for some pulled pork for my first attempt. Easily kept it between 250 and 275 for 6 hours. Turned out perfect on my first try.
