Anybody have a civiche recipe? I saw a good looking one on one of Bourdain's shows one time, but I don't remember how they did it. I know you "cook" the fish in citrus juice, but what do you add to it?

If this damn east wind will lay, I will go catch some specs. I would like to try and make some civiche out of some of the filets.

I make a ceviche once a week.

Fresh limes, yellow bell pepper, jalapeno, purple onion, cilantro, avocado, salt, pepper.

Keep it simple. Skip the tomatoes and cucumber BS.
