How much rosemary is too much?

I have yet to find a definitive answer as to exactly how much one has to consume to make you sick. I would think that raw rosemary is more potent, and yet rosemary oil is infused with a good bit of it. Anybody know of anyone who ODed on rosemary, or for that matter any other herb?

Rosemary rules the roost as an herb. I grow it, maybe the easiest herb to grow, and I love to use it, but I have learned to stay my hand. It can overpower a lot of dishes, especially the fresh stuff, although I have not used it dried in decades.

I don't know if you can 'OD' on it other than overpower a dish, I use the stems as skewers for grilled shrimp, I make rosemary scones, use a lot in BBQ shrimp.

I grow it as well. I can't grow enough of it, but you're right you can over do it in dominating a dish. I use it quite frequently, and have never gotten sick, but I know it's technically a poisonous herb by definition. I just wonder how much would be too much where you actually got sick from it? Baking off some focaccia that has roughly a 1/4 cup on top, and it got me to wonder how much is too much.

Interesting. Never knew it could make you sick. It's so strong that I would imagine that you couldn't palate enough to make you sick unless you were in a rosemary eating contest.

No rosemary salads in my future, but I thought it did pose an interesting enough question. I've also read where it's best to avoid it when pregnant, and although I am not with child, I do wonder sometimes if I don't get just a little carried away with using it in stuff I cook. By far my favorite herb, especially with poultry and bread.

pretty sure you would have to eat a shite ton of it for it to make you sick. I wouldn't worry. It has been shown to be beneficial in many ways so keep eating it like you have been.
