Tried a simple red beans crock pot recipe

I found on TikTok and it turned out better than any other recipe I’ve cooked. KISS
1. Brown your sausage and remove
2. Add chopped onion and bell and cook until translucent. Add chopped garlic and cook until fragrant (20sec). Season vegetable mixture with Cajun seasoning of your choice. Put it on the browned sausage.
3. Dump dry beans into crock pot and cover with one quart chicken stock and 1/2 quart water. Dump in sausage and vegetables. Put in two ham hocks and some cubed ham seasoning. Add more Cajun seasoning to the top.
4. Cook for 12 hours and mash beans at 8 hours.
Absolutely perfect. The beans absorbs a ton of flavor so a lot of people get into trouble by adding bay leaves, celery, herbs and too much seasoning.

You essentially did everything necessary for red beans on the stove though.

Sounds like your basic RB&R recipe, just in a crock pot, so I bet it is good.
Only thing I would change is:
- Use all chicken broth / stock instead of adding water.
For seasoning, just taste your water once everything is mixed and has sat a little while. It should taste how you want the whole dish to taste in the end.
I'd still add a bay leaf or two, as I love the flavor they add.

I’m usually all broth in everything. But I remember a lot of my red beans cooks coming out too salty. So I did exactly what she said and it came out good and balanced.

I was going to say, it would seem like the two ham hocks will give you all the broth/stock you could want.

You could probably skip the ham seasoning cubes too without losing anything.

So basically do all the work necessary and then wait 12 HOURS to eat when you could cook on the stove in a few hours?

It's a crock pot recipe... There is a convenience factor with crock pots that you don't have when cooking on a stove, like starting it and going to work / sleep / whatever, then having it ready when you get back home.

I agree and you also don't have to worry about stirring or it sticking to the bottom of a pot etc...
Obviously, that doesn't work as well if you want to eat sooner. With a crock pot, you plan ahead or let it cook while you sleep if you want it for lunch, for example.
