I would budget anywhere from 5-10k. It really just depends on where you want to stay, and what you want to do. I know that sounds pretty vague, but it can be as cheap or as expensive as you want it to be. For 3 people, I would budget at least 5k though, because flights will be probably half of that budget.

Getting ready to purchase plane tickets. Is the extra 5-6 hundred per ticket for upgrade from regular coach to next level worth it?

It wouldn’t be for me but I’m a cheap arse. Nothing wrong with coach IMO. I’d save that money for food and lodging.

An age old question.
Flying with. Kid? Upgrading to biz class or premium economy? I don’t find premium economy to be a major difference. Biz class and an angle flat or lie flat? I do think it is worth it to upgrade as it’s easier for kids (and you) to get some quality sleep and arrive a touch more refreshed for day one. Other tip with kids is try and find the latest flight leaving US so when you land it’s a bit closer to their normal wake-up time.
If not traveling with kids, it’s just a personal question.

Are you tall? The extra legroom helps in premium economy.

It is worth it to upgrade. If you are several months out from your flight date I would book main cabin tickets then continue to check the cost of business class seats every day. In normal times there will be a few days when the price fluctuates down enough to upgrade a lot cheaper than normal. I did this on a flight to Rome several years ago and ended up in business class cheaper than my original main cabin fare

Premium economy is 4-5 hundred more. From what I can tell its not that much of an upgrade from economy to justify that cost( mostly leg room) or am I missing something?

No, I dont think you are missing anything. Not sure I would upgrade to Premium Economy for a flight from US to Europe. Maybe for a flight back. But may be better to watch and book a cheap biz class (or use miles).

I've been in main cabin or business class on many overseas flights. Business or first is by far the best. I've been in premium economy once on a flight back from Hawaii. It was a small step up from main cabin but a big step down from business. Book main cabin just to ensure a seat then watch every day to upgrade at your price comfort level. I upgraded to business at check in on a flight to Hawaii a few years ago for $100 each for wife and I. Never give up on the chance to go business on long flights. On east bound long flights if you can't sleep overnight on the plane jet lag will steal a day or two of your trip. I can sleep well in business but struggle with rest in lower class seats
