I don't see why that wouldn't work. Bottle shape might make it slightly more cumbersome for cleaning, and maybe if bottles aren't clear it would be harder to tell what you've got in them, but past that I can't see a reason why not. You probably could just shove a cork in there by hand really well and that probably would work as a stopper but if you've got something better then go for it.

I didn’t even know I liked eggnog until the OP Trout Bandit put me on it last year. Now, I’m a bit of an addict. The Alton Brown aged recipe is phenomenal, but I wanted to kick up a notch or two or three. I made this large batch a month ago, and it’s drinking beautifully now. I call it XocoNog, inspired by Mexican hot chocolate and infused with espresso, cocoa, vanilla, chilies, and cinnamon. I planned on gifting most of these, but I might scratch a few people off the list. It’s that tasty.

Sure, although I didn’t measure anything. I started with Alton Brown’s aged nog recipe. I only used 60% of the sugar called for. I’m trying to gain a few pounds over the holidays, not catch the diabetes.

I made coffee as strong as I could with the tools I have (moka pot and French press). I added some Arbol chili powder and cinnamon to the coffee grounds. I added more to the brewed coffee, along with cocoa bitters, cocoa powder, and vanilla. I adjusted to taste, aiming for a strong concentrate that balanced all these flavors, and allowed to steep until cool. Mixed it up well since there was a lot of settling, and poured enough into each bottle that I could taste the adjuncts.

I’m giving the bottles a shake every week or so to reincorporate all that settled. I’m VERY happy with how this turned out. I have plenty for now, but will continue to experiment with it in the future. If anyone has any tips on the method for adding these flavors, I’m all ears.

Gentlemen:
Please take care altering this recipe by reducing either the sugar or the proof. Both are important in allowing this beverage to be carried for so long. If you’re aging under refrigeration for a month, it’s probably no big deal. However, if you’re carrying it 12-18 mos, as I am, it may be critical. Sugar is an anti microbial as well as the alcohol.

I'm pretty sure the alcohol is much more important than the sugar in terms of preserving. While I'm sure it helps, a quick Google search tells me that it's not critical.

I plan on making a double batch this weekend. My plans are some for turkey day, some for Christmas and the rest for next year. Do y'all find any kind of change in texture or taste whether its refrigerated or not? I've got room to store it both ways.

I'm not sure anyone has had the balls to store it at room temp yet

Has anyone tried subbing the sugar for honey? I was out checking my hive the other day and it dawned on me that I may try to sub the 2 cups sugar for 1 1/2 cups honey. I kind of want to make a mini batch just to test it out and see how the flavor changes.

Just made a batch per the said recipe, came out to 96 ounces (.75 gal)

Hmm how does this happen? I followed the recipe and it yielded about 70 ounces

The liquid (pints plus cups) alone is more than 70 ounces. Different recipe?

Figured out what happened. I was letting my 9 year old do the measuring and my oversight was lacking. He did 1 cup for all liquids. So my egg nog is extra boozy. Should help me deal with the in-laws come Christmas

Picking up the liquor after work today to make a batch or two. I am really thinking about trying to add cocoa and make a more chocolate flavored one but am going to try the recipe first to see if I like it. I am using a spiced rum because that's what I have for now.

How does this compare to store bought versions as far as taste goes?

There is no comparison IMO. As a kid I loved eggnog. Couldn't get enough of it and would drink myself sick some years. When I got old enough I thought I'd like it with alcohol too. I ended up hating it and really only tried here and there once every few years.

This stuff is amazing. I feel like a kid again. It has a really great flavor and the longer you let it sit, the less boozy it gets so it can sneak up on you. If you like eggnog at all, it is a must for the holidays.

I feel like the biggest difference is the texture. I don't feel like I'm drinking gloop with thr homemade version.
