The Ft Worth zoo will be quite a drive from Waco for a 3 day trip. There is a Wooly Mammoth site in Waco... It's a National Park now. Check that out instead.
Otherwise I'd skip Waco altogether and either do Austin or San Antonio/New Braunfels.
