Cajun dishes to cook for someone that can’t have seafood?

We are going to visit my wife’s sister and husband. They have requested I cook some Cajun food but the husband has bad gout and can’t have seafood. The obvious answer would be chicken an sausage gumbo but I want to do something different. I was thinking of just doing a Cajun rice and gravy but that might not seem “Cajun” to them.

I learned on Reddit that rice and gravy is actually pretty foreign to a lot of people. So you might be good.

Chicken fricassee would be my vote. If not then maybe chicken stew, smothered pork chops, or meatball stew?

Rice and gravy made with chicken or pork or game meat like rabbit or squirrel is definitely traditional. Sauce piquant as well. Jambalaya, pastalaya.

Paul Prudhomme's chicken etouffee is good. It does taste similar to his gumbo in that he fries the chicken and uses that oil to make a roux. It's basically smothered chicken with a roux gravy.

You might also consider a stuffed pork tenderloin to get away from chicken for every meal.

rabbit sauce piquant
braised rabbit w/ white beans and rice
field peas w/snaps + rice
riz au feves (like a jambalaya, but with field peas; could also use purple hull or blackeyes)

Macque choux, dirty rice are good suggestions. How about sauce piquante, sticky chicken or smothered chicken/chicken etouffee, and green beans cooked w/a little tasso ans new potatoes? Red beans, or white beans with a little sausage, or baby green limas or petits pois in a roux. Roast a chicken stuffed with boudin...



Beignets, gateau de sirop, pralines, tarte a la bouillie for something sweet.

Dad used to make Red Beans and Rice with sausage no problem and he was on meds for gout.

He'd also eat freshwater fish, mussels, prawn, crawdads.

Gotcha. I've never known anyone who had it, but I've read that the pain is excruciating.

Organ meats are also bad for gout, so be careful with boudin, dirty rice, chauvin, etc

The meds for it are rough even. Blood tests to regulate dosage, potential serious kidney/liver damage. Just a very unpleasant condition overall.

Dad had it in his ankles so just standing, walking, laying down or sitting with his feet propped up hurt (think about how laying down or feet propped up in recliner your ankles naturally roll to relax).
