Even if they had ground to plant, it will take weeks to months to get it to maturity. They would starve to death before then.
Many preppers know they really need to be able to survive for 60-90 days. Because everyone else will be dead by then.

So many things to consider when choosing to create an unstable city with no law.

Yeah, they ran a truck on a preplanned route, to a preplanned dock, where they made sure that the situation was perfect, so that nothing could fail, and then said "SEE WE DID IT!" no, you didn't, that aint real world shite. Self driving OTR trucks will never happen.
Oh, was that the truck that was hauling a load of steel?
Those don't even back into a dock, they just pull into a yard and are unloaded from the sides, or by a crane.

So, you have a whole team of people to make sure that everything works perfectly, so that you could replace 1 truck driver on 1 load?

You don't have a fricking clue. If you want self driving OTR trucks, you will have to change the entire country to make it work. That's not going to happen. It can only work in hub situations. You don't realize what kind of chaos that most delivery and loading situations are. To make it possible you have to spend billions of trillions of dollars to upgrade every shipping and receiving situation. OTR trucks generally leave home with a load and after that is delivered, you are taking whatever freight you can find to come home. I have picked up hay in the front yard of a double wide trailer in New Mexico, to deliver in Idaho, where I got loaded with seed potatoes, to go back to a farm at a Navaho Reservation in New Mexico, so I could catch a load Of beer cans in Golden Colorado, to take back to Alabama, and every load was a big clusterfrick, and this is the norm. You fix all of that stuff, and automated trucks might work.

We're talking decades and decades to do it at scale, lots of things are tested... doing it at scale and being able to financial make money on a test is something completely different.
Long-haul would be first, but what's the real difference between that and rail? Not much. As far as the process to even see if this will ever be financially viable at scale will take decades and might never happen.
The challenges are pretty great imo, and to me the reward seems pretty low at best if not possibly negative.
1. regulatory structure has to change, which may never happen... certainly isn't going to change any time soon
2. drastic changes to infrastructure even for long-haul
3. short haul has so many challenges I couldn't even begin to list them.... the whole infrastructure and road system would have to change
4. need all new infrastructure to monitor and control, maintenance, etc.
5. all new vehicles

For the last 200 years (since rapid industrialization in the US) jobs have been consistently plentiful so requiring that people gain meaningful employment to sustain themselves was a noble social value. But when that changes, how do we adapt that value?
This is an age-old argument that history has proven wrong time and time again. When automation or technology eliminates a job, other opportunities invariably arise that create employment for the person displaced by the automation since all human wants and desires can never be satisfied.
When automobiles replaced horse buggies, buggy whip makers faced the prospect of losing their livelihood because the demand for horse whips plummeted. Yet that merely created opportunities for buggy-whip makers to pursue other economic endeavors.
Again, technology changes but our humanity — what makes us human — is constant. Technological advances will not ultimately thwart human ingenuity and humanity’s inborn desire to create and find a purpose in this world.
