Stingray Meat

Not sure if this has been mentioned but I had a friend give me some stingray meat and I was wondering what's the best way to cook it.

its more of a red meat fish isnt it? follow recipes for tuna or any dark meat fish

I can't remember the name of the restaurant in Atlanta that had a Louisiana born chef. The special that night was skate which is ray meat. I was very good.

While skate is in the ray family they are a completly different species and only a very distant cousin of the GOM "sting rays".
Skate is a very popular table fish in most other countries, it fetches a premium in the EU and UK.

I've heard the stingray meat can be very chewy. I can't see how that would work.
I'm going to focus my day tomorrow on making it but this rain in New Orleans has me hiking up my jean shorts. Might have to use the oven.

I don't think Skate is the same as ray meat. One person said do it like tuna and now another is saying red meat.
