Buy tickets and book a room, make reservations and fast passes, show up and do things, go home.

just spent a week there. My thoughts
Stay on site
Park hopper is great if you like eating dinner at different resorts(Epcot for us)
Boardwalk and Disney Springs are underrated
Go during school year- weather is much better and not as crowded
Bring a backpack or two and stock it with snacks and water
We didn't do the dining plan
If you have a daughter, the "Be our Guest" dinner at Belle's castle was my daughters favorite thing.

Dining plan is definitely not worth it, imo. Makes dining at Disney feel forced.

Visit Uniglo in Disney Springs first for all your Disney gear for the week. High quality and much lower than the costs of disney clothes in the parks. Don't buy park hopper tickets.

Pro advice would be to get the park hopper, then upgrade to the AP when you get onsite.

Secret top level expert pro advice would be to buy a discounted park hopper from undercover tourist. Then after scanning your magic band and entering any park for the first time go to guest relations to upgrade your tickets to APs so you get the full disney retail value for the tickets and not just the discounted price you paid (aka price bridging).
Man, Im torn on whether or not to renew our APs. They expire this June and outside of Mardi Gras 2019 I just don't think I would get two trips in before June 2019. We were tossing around the idea of going back to Hawaii for either Easter or Mardi Gras 2019 so that would definitely rule it out but not really sure what we want to do.

That’s exactly what we’re doing. Bought from UT and will upgrade when we get to the park.
ETA: We are going back in April. Staying at Boardwalk for the first time. Excited about that location. Ell jr staying home.

Ell, I'm hi-jacking the thread possibly...
A possible New Years trip may be in the plans....Recommendations on a hotel/resort near Disney or Orlando...obviously the LSU game is in play..but looks like we may do this trip..
Also, I'm assuming too late for Fast Passes.
Need a place that can house atleast 4 adults, 4 kids...or if bigger 6 adults...
Just wondering if anyone knows of places with experience.

You're already inside 30 days, so you should be able to look at what's available no matter where you are staying. You just need a "my disney experience" setup. I can't remember if you have to have park tickets added yet though.

Probably. I've never stayed offsite when fast passes on MDE were an option, so that's just my assumption.
