It was the Dunbar Cannery, which was in the Bywater neighborhood of New Orleans, on Chartres St. between Piety and Desire.

The same company also had a large oyster shucking facility in Biloxi, so this could very well be that facility just mislabeled as being in Louisiana.

My ex wife was a crew member on the Constitution during that voyage.

Yeap. LSU has tried to renovate or demolish that building but each effort has been thwarted by oldtimers (with powerful political connections) protesting the historical significance of the building. They will not accept anything other than a complete restoral of the original building's form/function which the LSU admin has no intention of doing.

the building still hosts classes to this day
