Yep, the Hispanic cooks in my kitchen would save the pineapple rinds & ferment them in plastic containers. I'm sure your version is a bit more refined. What's your method?

Basically same thing although I used the fruit as well and mashed it down to add more fruitiness to the drink.

Added cinnamon, cardamom and a serrano pepper as well for spice.
