I think Hobbit & LOTR is a must if you like fantasy.
After ASOIAF I've read Kingkiller Chronicles and The Stormlight Archive. I have really enjoyed both.
I recycle and reread a series after a while. They are in depth and I miss some things in the beginning that mean a lot more once you read a second time.
