My wife made a roast in a dutch oven last night- we both forgot to refrigerate

It's been sitting on the stove since last night, in the dutch oven. I want to eat it but I also don't want to get sick.
Someone please convince me I shouldn't throw it out and that I will be fine if I heat it back up and go to town.
I'm distraught.

You were given a nose for a reason... use it wisely.

Give it the sniff test. If it's fine, crank it back up in the oven and eat.

it definitely smells fine but google has told me that can be deceiving, and I can still get the AIDS
I'm currently standing over it weighing the pros and cons

How warm is your house?
I'd probably eat it.

It'll be fine, go for it. Was the dutch oven lid on? If so, even better chance that it'll be fine.

lid has been on it all night and today

With a lid on, I would definitely eat.

you got a thermo pen?
if it has been below 140 degrees for over 2 hours its in the danger zone

it's currently in the oven at 350.
I figure 30-40 min and I'll check it out. It smells fine. Delicious, actually.
Thanks for the coercion everyone and I'll let you know if I die.

it definitely has been under that for more than 2 hours

Just eat a little bit and see how you feel in a few hours. If you feel fine, eat the rest. It ain't rocket science.

If it smells fine, go for it. Worst case scenario you get a little case of the bubble guts. Nothing wrong with clearing things out down there every once in a while. You'll be fine.

Were you leaving it on the stove to cool? or just forgot about it?

If you get sick from that, you likely have a compromised immune system. It's completely fine to eat.
