I went to Pho Bang (westbank location) the other day and requested to switch noodles out for veggies and she had no idea what I was talking about and just finally nodded her head and still brought it to me with noodles.

The vegetarian pho always has noodles: it's the broth that's vegetarian. No other veg are generally included in the bowl. Otherwise, it's just like meat-based pho, served w/a side of herbs, bean sprouts, and lime wedges. Maybe I'm confused, but I've gotten veggies instead of noodles from Lilly's and Pho Orchid express multiple times (can't remember what was in it, because it's been a while).
And I'm not talking about strictly bean sprouts.

Pretty sure Lilly's even list on the menu you can order the pho without noodles. Got to keep up with the hipster diet trends brah.

Highly possible. Lilly's does the best job of adding veggies. The bok choy is awesome!

Have you ever tried the other vietnamese favorite noodle soup? Spicy Beef noodle soup, it has a pork bone soup base rather than a beef bone soup base.

I always enjoyed Ba Chi and Mint, but I'm far from a pho maven, so take my advice for what it's worth - not much.
