What do you want them to do? Get rid of steaks and fish?

...with canned seafood dripping with locally sourced olive oil crushed by the feets of oak fed swine.

kinda...
I never order steak at a restaurant because steaks generally bore me and the value just isn't there.
If I'm spending $100-$150 on a meal, I want it to be something that I wouldn't think of doing or something that I'm incapable of coming within 80% of at home
places like that are what they are, I'm not hating on them, they just don't really do anything for me
I still go though because everytime we come to Alex the grandparents want to watch the kid and tell me and the wife to have a date night, so we inevitably end up at Spirts, Diamond, Bistro, or Veronas. I would just like a little more options, thats all. Or at least a place that I really love and don't mind going to every time. We like Janhons, its just so out of the way.
*and I'm aware Alex is a small town.

That is your barometer?

They would go out of business. Look, this area is not for you. You have to realize you're a pretty weird dude. Like Gaston weird but to another level. Don't you wear Bob shoes?

Yes. Is something wrong with that?

Maybe this is who goes to the restaurants that are serving canned fish.
Yes, someone has convinced people to pay 35 dollars for a can of rancid clams.
But, it isn't 'boring'

I would much rather go to that NOLA restaurant than another steakhouse.
Absolutely.
Absolutely.

Most of these goofy new chefs will fail, precisely because they cant: control quality, offer a consistent concept,or will they appeal to enough people to generate enough revenue to float their whims.

My all time favorite is Oriental Wok. I love the tiny spicy chicken and make sure I grab an order any time I'm in town. I have yet to find it's equal in BR. That's just my humble pedestrian opinion though. Your mileage may vary.

When were we talking about steakhouses?

I thought we were just talking about steak in general...?
