not on the regular menu? Server always says it is "excellent." You don't want to serve the good shite other nights?

Plenty are something the chef may have gotten at the market that morning that is otherwise not available everyday.
Could be countless reasons

Because if it were on the regular menu, it would not be the special of the night.

Sometimes you can't get the meat or ingredients consistently. Or it might not make economical sense to do a bunch of prep work every day if you're only going to serve three or four of the dishes. Also, a lot of specials are the chef's ideas--trying new things.
Terrible thread by the way.

This was for the OT. It would have gotten all kinds of bullshite answers. They moved it here on me. Feels stuffy in here.

Same reason the McRib is only for a limited time. No one would pay the exorbitant price for a usually lackluster product on a daily basis.

Often it is just marketing. Some folks expect specials and like to order them to feel special.
One place I go to has had the same off-the-menu specials for years. Even if they don't mention one, ask and they will make it. They're not really special at all. Just not on the printed menu.

Cause the chef gets tired of making the same damn dishes over and over

I think you should really think hard before starting another thread

Just to add another possible reason, I have heard from one of my managers, the Steakhouse used to work at, had a dish; Amazingly popular, they put it on the menu, it didn't sell.

The difference between ordinary and extraordinary....is that little something extra.

It's not always stuff that's going bad, sometimes it's a chance for the chef to do something different.

No way to know, in general. Could be a number of reasons.
Was that too stuffy?
