Jiro dreams of sushi
This.
Also, Kings of Pastry, it's about the Meilleur Ouvrier de France competition which is about as stressful as any food competition could be.
Three Stars, a detailed look at running a high level restaurant.
Not a documentary per se but Mind of a Chef is amazing, especially the David Chang and Sean Brock seasons.

The two that I recommend are the following:
-Cautionary: Fed Up - I know some dislike it, because it sort of takes the onus off the individual and puts it on the government/businesses/agencies/etc, but I do think the demonization of fat vs sugar is mindboggling. So many people still don't understand how sugar is astronomically worse for you, especially from non-natural sources.
-Food Porn: Jiro Dreams of Sushi - I've watched this probably 2-3 times, and it's still breathtaking. Eating at his restaurant is one of those life dreams I know I will almost certainly not achieve, but I can't even imagine how incredible it would be. I also found it so incredibly interesting all the dynamics of the Japanese household and devotion to craft as well as Jiro's relationship and trust with his suppliers.
One part of this movie I did get to experience when I visited Japan was I woke-up at about 4:30 and went to the tuna market that they showed. It was incredible watching how everything is done, and then some of the guys take their catch right there on the spot and filet it up for the freshest sashimi you could ever imagine. It was unbelievable. I'm horrified by the time I make it back the tuna ban will almost certainly be in full effect .
