Where to stop from New Orleans to Los Angeles?

My little sister is about to go to school outside of LA, and I was thinking about making a drive up there with all of her crap. It will be in between semesters and I can get off of work if I want, so I figured why not?
Furthest west I've driven is San Antonio. I figured I'd take I-10 all of the way there, but wanted to check out a couple of places on the way. I'm not opposed to taking a big detour, but not anything more than a few hundred miles.
I was thinking of going to the Grand Canyon and then through Vegas. I have no interest in gambling though, so that's not a definite, but it is on the way from the Grand Canyon. Possibly drive through Austin because I've never been there? Maybe I could go to Mexico and try not to get kidnapped? Can I just drive over the border, eat some Mexican food, pretend I know Spanish, and go back?
Thoughts? Ideas on anywhere else to see? Are there enough gas stations in West TX, NM, and AZ where I wont have to ration my gas (500 miles per tank)?

Be prepared to hate driving though Texas with a passion. Arizona and New Mexico offer some good side trips. Made the drive from Las Vegas to Slidell a few times.

I rode to Midland with my dad once when I was younger, and all I remember thinking was "Where is everything?"
Probably going to be driving 95-100mph, so that should help

My friend moved to LA from BR and drove there. She said driving through West Texas (anything past San Antonio) was the most miserable boring drive ever

I think the drive up UNTIL San Antonio is dreadful, but after that it gets interesting...love the desert landscape. I don't understand what people love about seeing the same goddamn greenery and interstate-side gas stations that you can find between the East Coast and Houston (parts of Louisiana are an obvious exception to this, but most of us are familiar with that by now if we're on this board.).

Lubbock would be 4 fricking hours out of his way regardless of his route. That's like saying on a trip from NOLA to Miami, stop off Charleston.

This is a lot further from I-10 than your thinking it is.

I've steadily seen the border towns get worse and worse. 15 years ago it was no big deal to cross at many of them and eat, shop, get pills, whatever. I don't think I'd go to most of them anymore.

Yeah but if he's going via I-10 the closest he will have to turn off in PHX and drive the 4 hours up to the Grand Canyon....and then another 4 hours from there to Vegas.
Or skip GC and Vegas and stay on I-10 and be in L.A in like 5-6 hours once he hits PHX

Well, I can comfortably make a 12hr drive each day. I can do plenty more without a problem. No problem with that. If I went up that way, I could hit the grand canyon, Hoover dam, and Vegas in one trip.
I don't look like a rich, preppy white dude, so I'm not that worried about going to Mexico for a little while. I'll be by myself driving my truck
*Keep in mind that I will be driving there and back

Drive to Amarillo on Day 1 then you can make it to Vegas the next day.
I made the drive once. Left BR at midnight, got to Amarillo at about 1pm. Crashed for 4 hr in Amarillo then got up and drove and saw the sun coming up when we pulled into Vegas.
