John Besh's gumbo recipe calls for tomatoes.

Of course, Besh is an idiot so what does he know?

Gumbo can be good with tomatoes. Not a tomatoe-y gumbo, but a few can add a good taste to it.

What is the big deal?

Yes. Lots of folks in n.o. Add some tomatoes to seafood gumbo. Not like how the OP said he saw it done on the show.
Doesn't belong in chicken and sausage gumbo.

I just looked at Besh's seafood gumbo recipe from his site, his duck and oyster gumbo recipe from Garden & Gun, and his chicken and sausage recipe from food and wine magazine

None had tomatoes

Cajun gumbo, no tomatoes. Mostly chicken and sausage.
a. North of LA90 no seafood
b. South of LA90 with seafood

Creole Gumbo, seafood and tomatoes.

File' gumbo, onion based roux, whatever else you can find.
