Lonesome Dove - the Goat western for me. Robert Duval and Tommy Lee Jones at the very top of their games. And Diane Lane was gorgeous.
Good Bad and the Ugly - quintessential Eastwood with great turns by Lee Van Cleef and Eli Wallach.
Outlaw Josey Wales - Another classic Eastwood movie in a somewhat more realistic and gritty style.
Watch Rio Bravo and El Dorado - two very similar (almost identical) movies from the same director (Hawkes) and star (John Wayne) with different supporting casts that are fun to compare and contrast. And take a side on which is better.
And not so much to the OP, but for those of you have seen pretty much everything western here's one - give the old mini series Centennial a try. At last the cattle drive episode(s) with Dennis Weaver leading a drive. Not high art but I enjoyed.
