The Grilled Cheese Academy (A Collection of Recipes)

I stumbled upon this site today, and I'm in love.
Endless grilled cheese (really, just regular sandwiches with cheese--but whatever) recipes.
I thought some of you would be interested in these recipes. A lot of them are pretty legit.
A few of them:
The Delilah
The Chateau
The Bearded Pig
I'm a sucker for fancy sandwiches, and they have some pretty good ideas.
Side note: Really annoys me when they call something grilled cheese when it's just a regular sandwich with cheese on it.

After seeing this, I'm pretty sure I'll pick up a loaf of bread, bacon, and cheese at lunch.
A bunch of those recipes use "Wisconsin" cheese. Is that cheese special or something?

I notice that too.
For "Wisconsin aged cheddar", it's obvious, but if some just say "Wisconsin cheese" without any other qualifier, I guess look at the photo and guess?
Colby originated in Wisconsin, says Wiki.
ETA: It looks like they give the type of cheese in each recipe, just write Wisconsin with each one.
Either the creator is from Wisconsin.. or they're being uppity.

Now that I think about it, I have smoked turkey.. cranberry jalapeno jam.. bread.. and pepper jack cheese here at the office with me.

Well it does say it is the Grilled Cheese Academy...proudly honoring Wisconsin cheese.
Good find. I broke out the panini machine this weekend and made a really tasty sandwich. Definitely doing it more often.

If I had disposable income, I'd want to open a place that serves paninis/sandwiches just like the ones in the link. Here in BR, there just aren't enough places serving "gourmet" sandwiches, and it's my absolute favorite. Latte e Miele was one of the only ones, and it's gone

I agree. The Breadbox made some pretty decent sandwiches. It closed, right?

I can't say I'd ever heard of that place until just now, but it does appear to be closed :/
