I am a newb when it comes to this crap. Which one should I purchase? Can I access LSU games on either of these devices? Thanks.

Might want to check out the Fire TV. I see it was on sale on amazon recently. It does most everything the others do and mirrors a tablet screen.

Roku. Plex Unofficial App store FTMFW.
Unless you own the rest of the Apple ecosystem. In that case you might as well get an apple TV.

What does Plex do for me? Are you saying I'll be able to access SEC Network, ESPN, CST, etc. (LSU football games) via Plex?

I haven't experimented much with sports yet, but I would bet there are unofficial channels for that too. Just google Plex Unofficial Channels.
There is an official ESPN channel if you have cable or know someone who does.
Plex also has a mobile app so you can stream content to your phone/tablet.
If you really want to cut the cord get a single board HTPC and load it with XBMC and Navi X. However, this is the option for a little more advanced user.
