Most places, that I know about, are already mentioned. Ed's Shenandoah Hardware, on Jones Creek Rd, always carries a good selection of equipment, as well.
Bohning's Supermarket, in Ponchatoula, will also cut your meats and sausage if ordered a couple of days ahead. It really helps out if you're doing a big cook.
I did a thousand plate fund raiser for a school, several years ago, and went to Double D Sausage in Bogalusa. They were very nice and worked with me on the price because it was a school fund raiser. They also cut up my pork and sliced my sausage for that jambalaya. I imagine that they will still cut it to order.
