Smoked beef ribs cook time

I picked up a nice 1/2 rack of beef ribs this morning. I've never cooked them before, and I can only remember eating them once before. I rubbed them with some olive oil and sprinkled on some montreal steak seasoning, and they went on the egg at 250 degrees at 1pm. I figured I'd start basting them with butter after a few hours, and doubt I'll use a sauce on them. I checked one of my bbq cook books and it said 6-8 hours at 250 degrees, which was longer than I expected. Any advice on cooking time or how to know when they are done would be appreciated.
I'm about to pull some salmon off and put some pork ribs on, so if the beef ribs don't turn out good, I won't be going hungry.

I can't help you but I always buy something for backup when doing something new also. I would just use a thermometer and get it up to about 145.

I would wrap them after 4 hours and continue cooking until tender.

Beef ribs usually go 5-6 hours for me. I don't wrap.

I'm going to pull these at about 5 hours, no wrapping. At 3-1/2 hours I slathered them with some squeeze butter. At 4-1/2 I checked the internal temp, temp was 180, so I glazed them, and will be pulling soon. I've never checked internal temp on pork ribs, but I didn't know how to tell when these were done, so I used the thermo. Will be between 190 and 200 when I pull them. I hope they taste as good as they look.
Mid cook I decided to try a new side, smoked onions. Rubbed some oil and rib rub on some yellow onions and wrapped them in foil. After about an hour I'm going to unwrap them and put some sweet bbq sauce on them.
