What to do with Mint?

My mint plant is growing out of control, and I need something other than juleps and mojitos. Any thoughts?

Put mint in a red sauce. Use it with lamb, in mayonnaise with fresh cucumber and grilled salmon sandwich. Get a bunch of it together and infuse a simple syrup for sweet tea, or as a reduction for making ice cream or a sorbet.

Freeze a leaf or two in an ice cube. Use in tea or lemonade.

All of the above. I've also used it to make ice cream. When I'm working in the yard I'll also pull a leaf or two off and chew on them. Quick way to freshen your breath

Pea puree.
Start with frozen peas and cook them as normal, tossing in a little garlic. Strain, and reserve the liquid. Take some of your chopped mint and add it to the peas along with some of the liquid for the desired consistency, salt and pepper, then hit it with a stick blender adding slightly more liquid until you get the desired consistency.
Very easy to make, and it goes great with a nice thick pork chop.

I make huge pitchers of Mojitos and use a pretty good bit. Bring this to a few parties and you can go through it quick.

Use it in tabbouleh, put a little into pesto, make some mint syrup, try a mint flavored ice cream......

Samaha Marinade
Lemon juice
olive oil
mint, finely chopped
peppercorn
salad oil
bell pepper, chopped fine
onion , chopped fine
worcestershire sauce
1. Combine ingredients over med heat. Cook for 10 minutes.
2. Cool to room temperature, pour over meat and vegetables, and refrigerate overnight

Finely chopped its excellent in burgers. Taboule is a traditional Lebanese salad that requires fresh mint.

Minted Melon Salad
1/2 c orange juice
1/2 c honey
1/2 c chopped onion
1/4 c deseeded diced jalapeno, optional
Chopped honeydew, canteloupe, watermelon or a combination.
Salt and pepper lightly.
Chill and serve.
