Dinner - crawfish quesadillas w/ leftover boiled crawfish, corn, potatoes, added some onions, green onions, and cheese.
Other than freshly boiled, I really hate crawfish. My stomach hurts thinking of eating that.

Looks pretty good.

I hear ya. I mean, don't get me wrong. I get cravings for boiled crawfish, but I can't eat it all the time. It messes horribly with my stomach.
Beyond boiled crawfish, I don't like any crawfish meals. And man.. I have tried a ton of leftover boiled tail recipes. They just have too distinct of a taste that I don't like. I don't even like them fried on a platter or poboy.

Roast and rice 'n gravy, maque choux, asparagus, pistolettes, salad. My son's favorite cookies for dessert. (Haha, my son's favorite cookies come from a bakery, not my kitchen.)
I haven't made maque choux in years, and I must say, it turned out pretty good. It's not Grandma's maque choux, but still worth doing again.

Had lunch with some Sunday School friends remembering and celebrating a gift of grace and mercy we have received.
Wife was asked to make made potato salad. I was invited to be there. So much good food and so many good friends. He is risen and I am richly blessed.

I cooked this. (Not my picture)
Roast Pork Loin with Apples
I realized I didn't have apple cider, so I improvised with applesauce and brown sugar and adjusted the apple cider vinegar.
Turned out great.
Then, I peeled some Easter eggs and made tuna salad sandwiches. Probably the best I ever made.,
Next, we're going to have some stuffed artichoke.

Went to Martinique's Bistro with the wife and family. Was a beautiful meal and a beautiful day.
Smoked salmon was awesome
As was the poached eggs over crawfish cakes

I've only been to Martinique once and found it pretty mediocre, but I think that really had to do with the poor service. The food as I recall was pretty quality. My boy O brah has been a few times and really enjoys it and his is an opinion I respect. Poached eggs over crawfish cakes isn't my bag, but I can appreciate a well-executed dish even if it's something that I don't particularly enjoy. Looks like a superb meal y'all had.

I'm blessed to be good friends with a really solid local chef who occasionally takes over my kitchen and puts together a great meal for his wife and myself and my girl. Weather, food, drinks and company couldn't have been more perfect today.

I'm a big fan of Martiniques. Looks like you had a good one there.

The dessert I had was interesting. It was a coconut curry creme brûlée. Really good and very subtle.

Tujague's tonight and it sucked. The second oldest restaurant in Nola had obviously seen better days and if they remodeled, I sure couldn't tell.
Thank goodness R'evolution was so fabulous.
Some nice meals in this thread!

Only took 5 pages for the author of that fancy meal to get the credit!!!!
That looked damn good. As good as my filets on the BGE were, your meal wins easily.
Martinique was a great call for today. Love that patio area. I've had that salmon dish, it's excellent.
Happy Easter, All.
