I "fry" grits all the time. One of my favorite things for breakfast is a fried square of grits topped with a fried egg....ohh runny yolk and crispy grits hot damn!! Save your leftover grits and put them in a square container and let them firm up. Cut a few slices and fry em up in a little butter or bacon grease the next morning. Gamechanger

Hammond has a really good restaurant called Topela that has a dish with fried grits topped with filet mignon it's delicious
