Cook grits, place into a bit of plastic wrap and roll it up into a tubular shape, let it cool in fridge to set, slice it into round slices and toss into a frying pan, and you have homemade fried polenta. BOOM. Use yellow grits preferrably.

That's what I'm thinking too. They will stick to the pan and you won't get any crispy edges because they'll all be stuck.
I think I tried something like this once, with grits which were still gloopy and not shaped/formed. It was not pretty.

Okay. Grits will not stir fry like rice. However, you can certainly mix drippings I the grits or vice versa. They won't get any crunch, but may be tasty. I had dynamite dirty grits at Commander's.

O well. I figured if they worked like fried rice everyone would do it.

Wait a minute...the grits will behave like cornmeal mush, if you put sufficient fat in the pan first. Think about couche-couche....it is just pan fried, loose cornmeal mush that is stirred/broken up as it fries/crisps in the pan.

I "fry" grits all the time. One of my favorite things for breakfast is a fried square of grits topped with a fried egg....ohh runny yolk and crispy grits hot damn!! Save your leftover grits and put them in a square container and let them firm up. Cut a few slices and fry em up in a little butter or bacon grease the next morning. Gamechanger

Hammond has a really good restaurant called Topela that has a dish with fried grits topped with filet mignon it's delicious
