You say a chef switched from wine to beer centered menus.

I say it has more to do with attracting business than pure taste preference.

If it is the chef's preference, than his business model is whack, Son!

If you have no problem filling a restaurant selling a higher margin item then you would.

Aren't restaurants in the business of attracting patrons via taste preference?
