I watched an episode of this show a few days ago called "cooking with rice" which included a segment with a woman from Louisiana (Amelia Durand) cooking jambalaya.
I know there has been a lot of discussion about red/brown with tomato/without tomato jambalaya on this board. But, I don't think i have seen a recipe like her's. It included ham, jalapenos and tomato paste and she called the celery/bell pepper/onion mix the "trilogy".
Looks like her family own a food store "Durand's" in Mansura,La. Anyone ever heard of it?
Just wondering what everyone thinks of this recipe.
Here's the video.

Edit: I can't read. I thought it said trinity.
Now I get it.

That's a major kill it with fire moment.

I've only ever heard it call trinity.. so it sounded weird.
funny to see the sheep follow suit in the thread though.

Sounds more like Paella than jambalaya. Tomato Paste is just unconscionable.

I really can't believe bore people on this board weren't all up in arms about this one ...
... I mean, we all know about the disdain foe the maters in the Jamb on this board ... but LEMON JUICE?
I understand there my be some logic behind it with the acidity and how it likely compliments the shrimp well, but DAMN ... not in the Jambalaya!

So even if it tastes good you wouldn't like it? Or you just don't like them using the term jambalaya to describe the dish?

That has to be one of the worst excuses for jambalaya I have ever seen. Tomato paste, lemon juice, jalapeno?
This is horrible.

why? Seeds and all?

No seeds, I just chop a couple up and throw it in there. Just like it for some reason
Celery, onion, green onion, bell pepper, and jalapeño is what I throw in

I wouldn't use tomato paste, but will put 2-3 stewed tomatoes in it, just like my gumbo.

I do seeds and all with fresh japs...adds great heat depth to jambalaya.

I've known Amelia for thirty years. We went to LSU together and she is a publicist in New York for Clarkson Potter which is the publisher of Ina Gartens cookbooks.
It's not jambalaya as I've ever known it but I'd eat it.
