I'd suggest getting an enameled dutch oven for the jambalaya and just cooking it in your oven. Like a #10 size should be fine.
I have one cooker with two pots. I use the big one for turkeys and a smaller one for fish, shrimp. I've only done crawfish once. It was a lot of work, they came out a little mushy, and it is easier and costs about the same just to buy them cooked.
