for cracklins do you just use pork belly ? ,,, always wanted to try it and where i am in England they have pig farms everywhere so i can get it fresh

Going to do this when it gets cooler.
Hard to beat the Fall weather and cooking something like this outdoors.

You can use the belly or the back it doesnt matter. Belly has morw chunks of meat which is preferable to my taste.
