Thanks man. I wish you could have tried it 2 weeks ago. It really was a completely different IPA. It is still good now but it was way more aromatic and hop forward. My brother in law tried it then, and he's a recent convert to the craft brews, thanks to me. And he said the same thing. He loves the beer, but he said that when we had it 2 weeks ago, it tasted like a different beer.
I am surpised at how dark it is, considering how low the crystal amount was. It was 84% 2 row, 7% crystal 15, 4.5 vienna and 4.5% acidulated malt. Clocked in at 7 SRM.
My next IPA is already designed and will be much lighter, beersmith tells me 4.7 SRM.

I'm a big fan of Brett Pale Ale's nowadays. Would love to try it.
It is hard to find a good example of one, though. Some come off as too dry and almost cardboard like texture.
I have Hill Farmstead's Arthur sitting in my fridge waiting to be opened. That thing is going to be fantastic.
Rds, what sort of process do you use? Prepackaged brett mix, or pure brett strain? I'm sure you add dregs. I know you've discussed it before, but i'm too lazy to sift through this thread to find it.

Glad you found a Brett beer you like. I used his brett culture for the brett IPA I have fermenting now, and so far I don't taste anything like band aid, so you may like it too

I've got a few bottles of this current batch left, if you want to setup a trade. I'm brewing a fresh batch that is using the same grain bill ratios as my pale ale but will be closer to 9%. That will be ready for shipping in a month or so.

I got this Brett strain from a bottle of Crooked Stave '13 Hop Savant and then added some '15 Hop Savant dregs back over the summer. I typically top harvest yeast every few brews and can pull you some off this current batch that is fermenting. Everything else is pretty standard brewing with only a couple of twist. I use direct heat for the mash, so I mash in at about 100 and then raise the temp up to the target over about an hour. Then I no chill, using the same technique that Bottomland does.

Help! Just realized a Citra Pale recipe kit came with 4oz of Maltodextrin for the main boil. Can I boil it in 2 cups of water and add it to the carbor? Day 4 of initial fermentation.

I wouldn't worry with it, honestly, it's just a little unfermentable sugar for extra body. You could boil it 10 minutes or so and add it I guess

I thought about it, but I am not sure that my buddy who would travel up there again would be excited about going for the bama weekend.
And I would have to be massively guaranteed to get wort due to missing out last time.

You could... or you could just leave it out. It probably won't make a huge difference either way.
