1 will sort of bore you because a lot of the missions are tedious go here do this then come back type missions. Still a very fun game though.
2 still has those types of missions but they tried to limit them and make the game a little more progressive. It's a lot more fun with a lot more to do but no way I would skip over 1 completely.
It helps to have 1 done to know the back story of some of the characters in 2 as well as the origins of Pandora.

I have a lot of fond memories playing through the first game, but if it's a choice between one or the other, pick up 2. It's an extremely more polished version of 1, and since it's a lot more fun playing with friends, you'd have better luck with that on the sequel. You can wiki 1 to find out enough of the story, not that there was much of one.
