Post up some of your favorite wings recipes...

found this one while perusing another board, posted up by lsumark on rivals:
eta: after it was done, i sprinkled sesame seeds on them and mixed in some chopped cilantro leaves to liven it up some more.

Ingredients
1/2 habanero pepper, seeded and chopped

Add the vinegar, lime juice and orange juice and blend until smooth. Place the wings in a large resealable plastic bag and pour the marinade over them. Seal and refrigerate 4 to 6 hours.
Remove the wings and put the marinade in a pot and reduce by 1/4.
Put wings on direct heat to sear. Then remove to in-direct heat and baste with marinade about every 5-7 mins.

One big bottle of Frank's hot sauce and a stick of butter in a sauce pan.
Grill wings over medium to medium hot fire and take off after about 30 minutes or until done and slightly crisp.
Put wings in mixing bowl and pour hot sauce and butter mixture over wings and toss to coat.
Serve with bleu cheese or ranch dressing with carrots and celery.

On my weber or any charcoal pit for that matter.... cook them on the low side of heat until done.
take off toss in favorite sauce
put back on pit until they start to caramlize/crispy
take off and toss in favorite sauce again
enjoy a great batch of wings....
I can't give my best sauce recipes cause its different every time. I just start off with whatever hotsauce I have and some butter and go from there.

I've done it 3 times, you can tweak the ingredients i.e Soy sauce for fish sauce, chopped ginger for garlic, horse radish for jalopeno...
Ingredients
5 pounds frozen chicken wings
1 cup chicken broth
1/2 cup white sugar
1/4 cup fish sauce
1/4 cup crushed garlic
1/4 cup finely chopped jalapeno chile peppers
2 tablespoons cornstarch
3 teaspoons paprika
1 tablespoon olive oil
Directions
1.Preheat oven to 400 degrees F (200 degrees C).
2.Place chicken wings on a non-greased cookie sheet. Bake in the preheated oven for 45 minutes to 1 hour, turning once, until golden brown. Move to serving dish/platter.
3.In a medium skillet saute garlic and jalapeno peppers in olive oil until soft. Add chicken broth, fish sauce, paprika and sugar. Add cornstarch and let thicken. Stir all together and pour over crispy chicken wings.

add wings and whatever sauce im using to a pyrex dish and put over direct heat until sauce is warm.

Then I toss them in this:
half butter
1/4 louisiana hot sauce
1/4 tabasco
dash of worstershire
onion powder
garlic powder
crushed red pepper
parsley
Heated
then place the coated wings on a broiler rack and broil on high for 6 min per side (don't forget to spray the rack so they don't stick) or as crispy as you like them.
Then I toss them in this:

Do this, but add a little vinegar. Really brings out the flavor. Also add cayenne to increase the heat.

This is the absolute key. Whatever sauce I make I always put them on a sheet pan, sauce and let them sit on a closed pit for a few minutes to let the sauce set.
I have a fajita seasoning I use on the wings and cook on the green egg, low for about an hour.

dumb question, but would it work if u boiled them and then put em on the grill after marinating?

Don't see why not as the broiler is just an upside down grill. I don't like to boil meat unless it is a nice juicy steak, but I don't think marinating and then boiling is a good idea. Could be wrong on that.
If I was to boil, I would boil them and then toss with a sauce and then on the grill for a little crisp in the skin.

Grill them or fry them and toss them into a 50:50 mixture of the ingredients listed below. Best wings I've ever had. Everybody I feed them to raves about them.

Marinate in louisiana hot sauce overnight. Deep fry at 350-375 for about 7-8 min.
