Bake an egg in an avocado for breakfast

just tried this a little while ago and it was friggin' delicious. I've done eggs w/ avocado before but never thought of baking the egg inside the avocado.

Preheat oven to 425 w/ an iron skillet inside.
Cut avocado in half; hollow out some of it for the egg (some egg will spill over; no big deal)
Once oven is preheated put half avocado in iron skillet and crack the egg in.
Bake for 12 or so minutes (you can tell when it's done by looking at it)
Once its done top w/ salt & pepper (I added a little goat cheese and EVOO to it)

That picture was inspirational. I just put two halves with eggs in the oven. Should've scooped out more avocado though. Tough to judge how much is needed. I'll sprinkle with parmesan soon.

That's awesome, dude! I've been eating avocados a lot lately and have been hoping to use them different ways. I'll have to try this!

Does 12 minutes make the yolk hard boiled, or solid but still a little wet, or runny? I like a good runny egg, and there also a good chance I'd sprinkle some bacon bits on top.

I'd say that's in the solid but a little runny category.

It's hard to say cause this was my first time making it. I put it in before the oven was preheated and ended up doing it for 15 minutes total. honestly though if you jiggle the skillet you can kindof tell how far along you are just by how much the egg moves.

adding bacon is never a bad thing.

Never understood the avocado thing. They are tasteless to me with a funky consistency. However, my wife loves them and she will appreciate this.

Me, too. Love incorporating avocado into things.

Going to make a favorite of mine later tonight: avocado, corn, bean and tomato summer salad.

I have a kick arse tuna tartar recipe I'll post later that uses an avocado.
