Oysters by the gallon

Just saw an ad for Zuppardo's that's selling gallon containers of oysters for $75 each. There are also smaller containers available. I'm getting a gallon of them today.
Pints for $14
Quarts for $25
Half Gallons for $40
I've gotten gallons in the past and they were damn good oysters and at that price point it doesn't pay to buy them in sacks and have to open them------and I'm pretty big on opening my own oysters.
The only issue I have is they are not in their own brine, but I simply add some sea salt to the liquid in the gallon after I remove and make sure the oysters are clean and strain the brine. That kicks up the salt content of the oysters.

My wife came home with them a little while ago and I always take each oyster out the container to make sure there's no shells, then strain the brine through a fine sieve to remove any debris in it.
I counted 11 dozen oysters (132) of them and they are very nice overall with about 90% being what I consider an ideal oyster for half shell eating. There's a few small and a few pretty large ones, but they are few and far between.
Can't beat that for the price.

That price is down from years past. We always get some for Thanksgiving and I know a couple years ago a bucket was $125. It was also 3/4 brine it seemed. I got 87 oysters out of it. Some were big, but still felt like we got screwed.

Yeah, if I paid $125 for a gallon and only got 87 oysters, I'd be pissed too.
Zuppardo's has been selling them at that price when they go on special for the past couple years that I've bought them. I don't know what their regular price is, but the last couple years I've gotten a couple gallons a year.
Once I salt the brine to bring it back in line with what I like, I will fry some for po-boys, eat a couple dozen raw and charbroil some. If I have any left after eating them for a couple days, I'll put them in containers and freeze them to use in soups or dressings down the road.

I don't really measure anything. I just add some salt, give it a good stir to make sure it's mixed in well, give the brine a taste and go from there.
Even though the oysters are opened and then put in fresh water instead of just being in their own brine, a little salt is leeched from the oysters in that scenario, so it's not like the water they are in when you buy them is totally bland.
If I had to guess, I'd say start with about 2 heaping tablespoons and go from there.
