Guy takes every method he’s ever heard from from steakhouses to mom’s kitchens. Combines the 7 best methods into one steak. It’s interesting.
Has a panel of taste testers ranking the methods. Really put in work. Good info without having to experiment myself.

I've never really cared much about tenderizing a steak. Most good cuts - filets, ribeyes, ny strip, etc, are fine the way they are and I've never once thought "if only this were more tender" while eating it.

Well yeah, good steaks don't need tenderizing, and if you're using a cut of meat that's not tender, you're (probably) not cooking it as a steak, you're going to cook it in a manner that will tenderize as it cooks. This guy is using a cut of meat that needs tenderizing.

I would never thought baking soda made beef stir fry so tender. Sliced chuck + light soy sauce + dark soy sauce + sugar + baking soda + corn starch is my go to beef marinade for stir fry.

It works but you have to be careful because letting it set too long will give a weird, mealy texture.
