How hard would it be and could I run into weird stuff?
1920 house and the walls are all horizontal wainscoting boards. Not the fake ones they have now; real individual boards in really nice shape, too.

More information is needed.
It sounds like you are asking about the interior face of a load-bearing exterior brick wall. If that's the case your only concern should be the laterally unsupported height of the wall but that shouldn't be an issue if you have ceiling framing.

This is an interior chimney which heated the house with coal back in the day. The chimney was topped off and roofed over. I have not been up in the attic to check out if it is nicely mortared or not. Simply because I am old and can't climb that much ladder. I can tear things apart real well, though.
There are clipped corners in both the living room and big bedroom with wainscoting covering the brick n the bedroom and the living room has that plus crappy painted 60's paneling.
1920 house pretty much original down to the claw foot bathtub. Huge rooms and 10' ceilings; also wainscoted.

the chimney is structural masonry and is not holding up anything but itself. You can pull off whatever is attached to it just try not to tear it up; remove any anchors or screws you can find before you start demo
