Did a little cooking on NYE and New Years Day

New Years Eve

Had a few friends over on New Years Eve.

We started out with spinach salad with blueberries, cranberries, goat cheese, and a poppy seed dressing. Not the best picture but it was solid.



Moved onto Corn and Crab Bisque using Emeril's recipe.

Then I made this fantastic recipe from GW fins for a Horseradish Crusted Mahi (I couldn't find any drum) with a truffle potato sauce. Served it along side green beans almondine and mushroom risotto.





New Years Day

Kept it pretty simple but it was delicious as well. Tree Dawg's Black-eyed Pea Casserole was the star. Such a good little recipe.

Dijon mustard and brown sugar glazed Ham.

Roasted "cabbage steaks." Really like doing the cabbage this way over smothered. I do like smothered, but I really like doing cabbage this way and getting those crispy edges.

Looks great. I'm the only one in my house who likes cabbage and black eyed peas, so i rarely get to make it.

We had a NYE party and i made a smoked duck, chicken, rabbit, quail, and andouille gumbo. Smoked the ducks and chicken, deboned, roasted the bones in the oven, then made a stock. Needed enough for about 20-30 people so i supplemented with some store bought chicken stock/broth. Came out great, and still have a little bit left over.

Looks great! Can you post the BEP casserole recipe please? I made do with a can of Trappey’s BEP with jalapeño and some egg rolls with cabbage.
