With other food items, 1 per head unless they are small. Then 2 per head.

Right, they aren't all created the same. I'd say large 1 per, small 2 per.

Where are you ordering them from and how much do you anticipate paying…. I would say 2 per person as these days they tend to run on the small size….
Wish I had a friend like you soft shell crabs/Poboy or over pasta is one of my all time favorites….enoy and post some pictures

I would get 20.

ETA. I use to get 2nds (missing legs, smaller crabs, or ones that started to get a little firm) from a guy that crabbed for $1 a piece....... this was about 10-12 years ago. He still crabs but his wife passed and they don't do the soft shells anymore. I miss them $1 softshells

Yep. The wife and I were at the Westwego Seafood Lot about 2 months ago and they had fresh soft shell crabs for $10 each and they weren't worth bragging about.

Idk what they cost raw.

I had a sandwich at Dewey Destin’s a few months ago and it was $16.50 with a side. It had two small crabs. Seemed like a good price.

1.5 per person, 27 total, heck just round it to 30. You will have enough and a few leftover.

St Mary Seafood ...Mr. Edgard of Swampeople fame..in Franklin sells fresh #1's for $60/dz and frozen #2's for 40 dozen..They are the best purveyors of soft shells in the state!

Depending on how you batter them they almost always come out looking larger post-fry, so there's that. I would kill for #1s at $60. Last time I was at Schaefer's in Bucktown I believe they wanted $14 per.
And unless you know all your guests there may be some that won't eat a softshell. Typically I'm one to convince someone to at least try an unfamiliar food, but when I comes to softshells staying mum means more for me!

You could also offer an option to have them on a sandwich or poboy to make more filling.
