As much as I respect Jose Andres as human, I didn't care for his steakhouse there. Atmosphere is weird and it's just not worth the money ($650 for two with dinner/drinks)
I like the old school Golden Steer .. but haven't been to many others, which I am sure are plenty

There are so many to choose from. Every resort has at least one, most have two or more. My wife doesn't enjoy steak as much as she does seafood and some veggie options, so I read a LOT of menus. To me, I found that a great majority of them were very similar. Similar apps, soups, salads, and two tiers of steak options. The lower tier being at least aged prime and the higher tier American Waygu or better. A prime cut prepared in a steakhouse is your best value IMHO.
One of the things I didn't get to do was visit one of the old school prime rib places near the old Vegas. Of course you can get prime rib on some of the buffets, but why pay $75pp for buffet food?

Andiamo in The D hotel downtown is a great spot for a steak.
Cleaver is a spot off the strip popular with the locals. Went there a few months ago and had a fantastic meals. Everything was great. Fantastic cocktail menu. Apps were awesome. Steak was perfect. Highly recommend.

CUT was pretty awesome last time we were there. Tableside old fashioned was pretty tasty.

I haven't been to a lot of them, but we had a very good steak dinner last time at The Palm in Caesar's Palace.
