The jizyah was CERTAINLY intended to ENCOURAGE conversion. Sometimes it was successful (see Bosnia and Kosovo) and sometimes it was not (see the Iberian Jews).
By contrast, look at the Iberian Reconquista. No tax there. Non-Christians were given just two choices by the conquering Christians: convert to Catholicism or be expelled from the peninsula.
200,000 Jews who retained their religion thru centuries of Muslim rule were expelled for refusing to become Catholic.

True, but how many actually practice any religion at all. The Serbs claim they are Muslim by last name alone regardless if the person actually is religious. My MIL is Bosniac and my FIL is Serb. It is a very weird dynamic most Americans know nothing about.

Two centuries after the invasion, more than half the population was still Christian. There were entire principalities that were ruled by Christian nobles, which were tributary to Muslim overlords.
The population converted, because it was advantageous for them to do so.
I could cite you to 20 learned articles, but it would do no good. You would not bother to read them.
