Books 1-6 are wonderful.
Books 8ish-10 are really bad and a chore to get through, but once you get through that, the rest of the series is a great end.
And if you've only read the first two books, you haven't REALLY met the best character in the series, Mat, yet.

On my reread, 10 was the only one which was truly pointless and terrible, 9 was slightly better I think, but still pretty boring for 3/4 of the book)
I think 7 and 8 were both pretty good and worthy efforts (certainly not as good as like 2-6, which are all pretty damn phenomenal)

Yes, Matrim Cauthon, he is generally considered the best and most well liked character in the series and he doesn't even get a POV chapter until Book 3. When you are closer to finishing the series you will almost forget that it took so long for him to be "introduced".
RJ has said in interviews that it was one of his bigger mistakes early in the series not getting to him sooner and not finding his voice until Book 3.

It is one of the worst books I think I've ever read. Truly terrible, especially considering back then I had to wait in between books.

I have read the whole series 3 times, and it gets better each time. On my most recent reread, I kept waiting to get to the parts that I had previously found so difficult, and was surprised to find I had passed through them without the same degree of drudgery. Still, the kidnapping and the crown–grabbing story lines do bog down. The former is routinely referred to online as the PLOD, plot line of death or doom
The first time through, especially having to wait for each of the last 4 books, I had a very difficult time keeping track of the thousands of characters or even the 100s of important ones. I found the communities online dedicated to the book, including a comprehensive list of characters, each beginning with a physical description followed by chronologic brief synopses of each of their appearances in the story. Whoever did this did not continue it through the last couple or 3 books, but is otherwise complete. I am glad I did not find it while on my first read, because it was too easy to accidentally read too far in the chronology and reach spoilers. Some of the initial descriptions also tell you outright if some of the characters are dark friends, which can be a spoiler indeed.
Another great companion, especially your second time through, is the re–read and the re–re–read at tor.com by Lori Butler. The first was started before the final few books were published and included many spoilers up to that point, along with much speculation since most of the plot lines remained unresolved. It was an exciting time for readers.
Even the slower books have at least 1 plot–forwarding story line with a grand finish that made the book.

Also, the first 3 books serve as "the beginning", by which time all the main characters are introduced and their paths made clear. That is the time to go back and read the prequel, New Spring, which will make much more sense and will avoid spoilers that should be presented as intended in the first 3 books

Okay, you people are nuts. I always get the books confused, so I went back to see the plot lines from book 10. It most certainly included the majority of the plod, but also included the courting of tuon and the efforts of a certain novice to undermine the tower from the inside. Those are amongst my favorite storylines.

I dont want to get too spoilery for the people in this thread on Book 2. But I feel like the good parts of the above mentioned threads largely occurred/ got resolved in Book 11.

10 was like a perfect storm of the end of various storylines people didn't care about - Lion Throne, Faile, etc. which I guess were supposed to be the action?
Mat and Egwene scenes like you talk about were solid, but didn't really come into their own until Book 11 I don't think. I actually liked Book 11 a lot for the reasons you mentioned and there is a pretty cool ambush or something in there too. I'm very happy Robert Jordan got that one published solo for a good bounce back - would have been a shame for him to go out on that downturn.
The last 3 I think were good, haven't really read them more than once or twice though. Sanderson did a very good job with a difficult task of trying to bring all these different storylines to a head.

I was just recently told that these were being made into a series - is this going to be well produced with a decent budget? I'd love to see it near with GoT, but nowhere near the D&D quality. Any idea of the premiere?

Apparently they do have a big budget although I'm not sure what that figure is. They have been scouting production sites worldwide based on their instagram.
The showrunner is Rafe Judkins, who was writing for Agents of Shield (which is a pretty good show IMO) and he was already a fan of the series so I am happy with that.
Seem to make good hires for Director for the first few shows- been involved with things like Westworld, Stranger Things, Altered Carbon
Rosamund Pike is going to take the main lead in the early portion of the series - Gone Girl lead actress.
The guy who played Roose Bolton in GOT has also been cast in a role which comes into its own later in the series.
Most other casting decisions are fairly low to no name - series has a lot of young / teenage people taking big roles. So, we will see how it plays out in terms of production, but some pretty positive signs thus far.
ETA: The show / series starts out in a manner which I don't think you are going to need huge CGI budget type constraints, etc. So i would imagine, starting out, it will be pretty comparable to early Game of Thrones budget but that is purely speculation.

It APPEARS that Amazon is throwing budget at it but no one really knows. We don't know the amount of episodes or budget.
We do know that some smart people are involved, and that after just 2 months of filming Amazon has enough faith in it that they greenlit the whole writing team to start work on Season 2.
Rafe Judkins is a big fan and has solid credits, he is the showrunner.
Getting Rosamund Pike, a fairly in demand actress, to play Moiraine is a good get and shows the level of commitment to the production. She is also an Exec Producer.
We will see, but it looks like Amazon is giving this the chance to succeed.
