I don’t understand this. Why set up courts in hotels? What advantage does that offer over a traditional practice court facility?

They can practice, eat, and stay at the same facility. They can do it in a tiny, make-believe season and get paid. Or they can stay at home and make no money. Disney does not have ample courts for practice so they made two more.
