Long age sour update. Golden sour with bootleg solera 2015, 9 months old - only dropped 0.1 in pH to 3.6 from February. Kinda bland with not much character. So I removed about 8 trees opening it up a good bit. Plan on borrowing the tree limb trimmer from work this week to reach some higher limbs and vines to thin it out a little more. Thanks for the replies. We just got our house painted so most of our extra funds at the moment went towards that. There is just an empty field behind me that most of the taller trees are on. I can ask people in the neighborhood if they know who owns it and at least start with that step. ...

So my backyard is looking pretty rough. I had a big takeover of burweed that I killed with atrazine (I know I’ll have to keep treating those) and was left with a lot of dirt. Most of the backyard does not see sun until the afternoon and with the growth of all those trees, it gets little sun at that....

Hey Bug, so I just took a sample of my 4 month old Flanders red. pH is down to 3.4 and in the that sick phase. It tastes good but has some acetic on the nose. Is it normal to have some acetic this early or do I need to watch my oxygen ingress? ...

Philly sour was pretty good. Kept it at the high end at 77 for the whole fermentation (have read it performs better there) and took about 2 weeks to finish. pH went down to 3.4. Have not checked the acidity on the soleras yet. I brewed the golden at the beginning of December and red at the end. ...
