I plan on hitting Great Notion and Breakside Breweries along with hiking My. Good. Yet, what else can I look forward too? Was going to go to Seattle but the Mariners are away when I'm in town.

go on a homeless vacation... very popular with suburban millennials in the Summer. A downtown waitress told me there are over four dozen shelters in Portland.
If you build it, they will come!

Things to do in Portland:
4T - Trail, Tram, Trolley, and Train (look it up)
Washington Park (Zoo, Japanese Garden, International Test Rose Garden)
China Town
Pearl District
OMSI
Kennedy School - right by where you're staying and a cool McMenamin's property
Powell's Books
Hop's Game
East Side People Watching (Division St, NE Alberta, and Mississippi Ave)
Tom McCall Waterfront Park
Saturday Market (on Saturday and Sunday)
Farmers Market at PSU (Saturday only)
Forest Park
Mississippi Studios and Bar Bar (music venue)
McMenamin's Crystal Ball Room (music venue)
If I was me, I would rent a car for 2 days to take some trips from Portland.
Day Trip #1 - Drive to Hood River (1 1/2 hour drive). Stop at Multnomah Falls. There are some other doable hikes on the way (Angel's Rest, Oneonta Gorge). In Hood River, go wind surfing (best wind surfing in the world) and, of course, visit pFriem Brewery. Double Mountain is also there. Logsdon Brewing is there, too, but they are currently closed for remodeling. Take crowlers home, so you don't drive home lubricimated...
Day Trip #2 - Drive out Hwy 26 to Cannon Beach. Cool town. Visit Ecola State Park - great views and some hiking. From there, either go North 1/2 hour to Astoria, and, if it's a sunny day, climb the Astoria Column. Then go to Fort George Brewery and Buoy Brewing. At Fort George, go to the Lovell Tap Room in the production facility (next door to the restaurants). The tap room will have experimental beers for you to try. You could also drive south of Cannon Beach and go to Tillamook. De Garde Brewing is there, and about 20 minutes south in Pacific City is Pelican Brewpub with one of the greatest views possible. Again, pick up bottles and crowlers to take home, so you don't drive anoxibrated...

Still debating the car, was hoping I could get around just using public transportation.

You can rent a car for less than 20 bucks a day. That's probably in line with what you would pay for 2-3 Uber rides if you stayed in Portland. The big thing you would have to worry about is don't drink heavily until you're back in Portland and not driving.
