Must stops when driving from San Fran to San Diego?

Me and the wife are flying into San Francisco, renting a car, and driving the coast down to San Diego. We have 7 days and I know that is not nearly enough time to see everything. What are the must see and things to do along the way?

17 mile drive and Carmel are my favorites.

Big Sur, Hearst Castle, Santa Cruz boardwalk, St Inez Valley (wine).

North and Central Coast - Santa Cruz, Monterrey, Carmel/Pebble Beach- 2nd prettiest area in the USA, Big Sur, Point Conception, Santa Barbara-prettiest town in the USA

SoCal- Malibu, Santa Monica, LA beaches, Orange County, Laguna Beach, La Jolla, San Diego

I did this trip 25 years ago. Still one of my favorite vacations. All of the above suggestions are great. In Big Sur, eat at Nepenthe restaurant for lunch if timing is right. Check out the Post Ranch Inn also.
We also parked the car for a day and took the ferry to Catalina island and spent the night. Very cool.

Along with the others said, if you're driving down the 101, there is a small town named Solvang which is a Scandinavian type village in the Santa Ynez Valley. It's well worth taking a side trip off the beaten path.
